Veggie Egg Bake

9g Carbs, 16g Protein, 4g Fat, 141 Calories Servings 8, Severing size 5.5 oz


  • 1 c., Sliced Carrots

  • 1 cup, Broccoli - Raw

  • 1 large pepper, Yellow Bell Pepper

  • 1 tbsp, Parsley

  • 1 tbsp dried Chives

  • 1 container (302.50 gram), Mild Diced Tomatoes with Green Chilies

  • 3 wedge, Laughing Cow Light Swiss Cheese Wedges

  • 2 cup, Spinach

  • 1 tbsp, ground, Black pepper

  • 3 cup, Egg Whites(3 Egg Whites)

  • 0.50 cup, chopped, Yellow onion

  • 5 egg (50g), Large White Eggs

  • 4.20 gram, Table Blend Seasoning Blend

  • 1.50 tbsp, Garlic powder


Preheat oven to 350

Steam carrots for 2 minutes in the microwave

While the carrots are cooking, place 2 tbs of olive oil in a large skillet

Dice partially cooked carrots, broccoli, onions, yellow pepper, and place in the skillet. Sauté for ten minutes on medium heat

Turn down heat to low and add tomatoes with green chilies, laughing cow cheese,

and spinach until the spinach starts to wilt

While this cooks, in a large bowl combine egg whites and eggs then add the veggie mix in to the egg

Spray a 13x9x2 cake pan with olive oil then pour in the mixture, sprinkle parsley, chives, and black pepper on top and bake for 45 minutes

This would go great with a 2 tbs of salsa and 1 Cup of berries or a slice or sprouted toast! (macros will vary)
